a five-minute salad

This little beauty took five minutes to make, start to finish. Torn green lettuce. Chunks of smoky Gouda. Salty, paper-thin ribbons of proscuitto. Finished with a drizzle of sweet date-balsamic vinegar and fresh-cracked pepper.

Smoky, salty, and sweet–everything lunch needs. What did you have for lunch today?

  1. I love that you emphasized the 5 minutes here. Salads are so easy….with just a little imagination and prep, they make the quickest, most satisfying meal. i’ve recently discovered sweet potatoes, so my lunches lately have been arugula and a few chunks of sweet potato tossed with balsamic and olive oil atop a couple spoonfuls of seasoned lentils (I cheat and buy Trader Joes’ pre-cooked ones). I sprinkle some sunflower seeds and a bit of goat cheese on top and I’m in heaven.

    • That’s such a great idea! I would have never thought of using sweet potatoes in a salad. I’ve recently rediscovered them myself–they’re a superfood, you know! I’ll definitely be trying that idea soon.
